Our Tavern’s Story began in 2004 when Stelios, an experienced chef working in a restaurant in Chania, decided to return to his hometown and take over the traditional tavern run by his parents
His dream was to create a place where guests could experience the true taste of Crete, inspired by the home-cooked recipes of his mother and grandmother. From the very beginning, Stelios focused on authenticity – using only local, organic ingredients and preparing dishes in traditional wood-fired ovens and stoves, without any electric kitchen appliances. And it will always stay that way.
To ensure the highest quality ingredients, Stelios established his own farm. He grows vegetables in his garden and raises animals, allowing the tavern to serve only fresh, free-range eggs, meat, and dairy from his own farm.

Ntounias traditional gastronomic center of Cretan nutrition is the only place where everything is cooked using fire stoves and all ingredients come from local producers and Stelios’s farm and garden.
At Ntounias, Slow Food is more than a philosophy — it is the heart of our daily life. It means valuing the journey of each ingredient, respecting the seasons, and preparing food with patience, intention, and gratitude. We honor traditional methods passed down through generations, using pure, local ingredients and allowing flavors to develop naturally. Nothing is rushed. Nothing is forced. Here, cooking becomes a celebration of the land, the people, and the moment you share together.
